|THIS REALLY HAPPENED LAST WEEK|
Well, Spring Break is over and the kids went back to school today and I went back to my old routine. ☺ The kids have 8 weeks of school left before Summer Vacation...that means I have 8 weeks to tackle some of the "things" I want to get done before summer break. I wish I could get that "Spring Cleaning" bug to bite...so much to do...so little time.
Had a busy Spring Break. We had a STAYcation (get it? stayed home vacation). Tues. -Wed. flew by Thursday KJ and I made a NOT SO Quick trip to Beatrice but I found everything that I had on my list (and then some). ☺ Planned to be home by 2 but got home at 5:15. Oh well, time well spent with my daughter. I found 2 shirts for ten bucks (brand new) at Scweiser's (SP) she found some sandals and a shirt and I found the big casserole pan I have been looking for...for ages, plus a bridal shower gift.
As soon as we got home she helped me make the 2 desserts I needed to take to the annual Hooyer get together at the "Hole in the Wall" lodge by Akron, Iowa. We made "Salted Caramel Bars" (KJ loves these) and also "Date Bars". I grew up eating them, not knowing it was "dates/figs) and as I got older I realized it was dates in the recipe but I really like them. Dates are a fruit right? so they must be healthy, right? Plus oatmeal is good for the Heart...it says so right on the tube/tube/box...whatever you call it. (Let me know if you want the recipe, they are easy to make. I'll tell you what...my home page on Facebook is starting to look like PINTEREST. Is yours? Not that I mind people sharing recipes because I have "saved" some of them to try but I miss all the"pictures" and "updates" about what people have been up to etc..
After the desserts we made some "Lemon" cookies (someone posted it to FB) but they flopped but still editable. Then we started layering the "7 Layer Mexican Casserole" and had on the 7th item or so we thought and KJ said "Mom, what are you going to do with all this hamburger"? "DUH"...I forgot to put the seasoned Hamburger in the casserole. So we took off about 4 layers of ingredients and put the hamburger on it and proceeded to layer again. (It's amazing what a 12 oz. bag of shredded cheese can cover up and can make a mistake look like it NEVER happened. (NOTE to sister-in-laws in Iowa: I know I told you I fried 10 pounds of Hamburger for this recipe (because I doubled it) but I DID buy 10 pounds of Hamburger but what I forgot was; I used about 2 pounds in another casserole and I also made 4-loaf pans of Mexican Casserole to freeze and about 2 pounds in our taco meat for supper tonight. So I probably used 3-4 pounds in the casserole I brought to HITW. Sorry, my memory ain't what it used to be). If you tried to lift the pan you would know because it was HEAVY!

After supper, my sis-in-law Brenda sat up 6 "stations" and we divided into 6 teams and we had to do 6 different "Minute-to-Win-It" stunts. So much fun. Great stunts Brenda! We Kansans didn't win the trophy but I sure laughed hard. After all that excitement I went to our room, packed my suitcase because we planned to get up early and be on the road by 7:00 a.m.
We left at 7:30 with snow on the ground (and a plate with huge cinnamon rolls fresh from the oven; Thanks Julie for thinking of us) and heard Marysville had snow, too. We were early for Omaha church so we drove on to Lincoln and went to church there. We went to the church on Adams and they were very friendly and a good sermon.
It was 12:35 when we left there and believe it or not we ALL 5 agreed on a place to eat...Wendy's. I had my usual CHILI!!! Love their CHILI. Back on the road after a quick stop at Scheel's. (I was able to return Nick's cleats he bought (and NEVER wore) even though I didn't have the box but I did have the receipt...THANK YOU Scheel's for a smooth transaction).
Home about 3:00, unloaded the SUV and then p.m. service at church. The Hubs said we could do drive-through at Taco Bell and eat it on the way to check on the sidewalk they poured Friday. It was OK despite the snow fall. Dan and the kids went to some animated movie and I stayed home and listened to the hum and spin cycle of the washer and dryer. Always fun to get away and spend time with family but seriously...7 loads of laundry later...ugg. Tony took 8 shirts and wore every one of them and we were gone less than 48 hours!!! (I guess when you climb the rafters, play tag or hide and seek in an old barn and walk to the creek several times...it's a BOY thing).
Anyway, today was back to school for the kids. Tony had to bring snacks for the tennis team today so we kept tradition and I made Fruity Pebbles/rice Krispie treats and Kool-Aid. He went to the council meeting with the team to ask the council to please repair the 3 courts they condemned last week. (only 3 courts in use right now). I wish they would repair my street while they are at it. ☺
